The science behind the coffee-mold issue and what specialty coffee’s supply chain actually protects you from.
If you’ve been on social media at all lately, you’ve probably heard of the “coffee mold issue” or mycotoxins — usually followed by an expensive bag promising to be free of them. The concern is real, but so is the nuance. Here’s what the evidence actually says.
Specialty Coffee vs. Commodity Coffee: A Crucial Distinction
Not all coffee is created equal — and that matters a lot when it comes to managing quality and mitigating mold. Commodity coffee is mass-produced, traded on global exchanges primarily by price, and often dried quickly, stored in bulk, and shipped in porous burlap sacks with minimal quality oversight. It’s the kind of coffee that fills supermarket cans and fuels office percolators.
Specialty coffee, by contrast, is defined by quality at every stage. Scored at 80 or above on the Specialty Coffee Association (SCA)’s 100-point scale, these beans are hand-picked, carefully dried, and traceable to a specific farm or region. Crucially, the SCA grading system treats mold as a primary defect — moldy beans are automatically disqualified before they ever reach a roaster. Most documented mycotoxin problems trace back to commodity supply chains, not specialty ones.
What Are Mycotoxins?
Mycotoxins are toxic compounds produced by mold that develops on green (unroasted) beans under poor conditions: high humidity, inadequate drying, or improper storage. The main one associated with coffee is Ochratoxin A (OTA), classified as a possible human carcinogen. The catch: you can’t detect it by sight, smell, or taste. Lab testing is the only way to confirm its presence or absence.
Roasting helps — significantly. Studies suggest OTA is reduced by 69–96% during the roasting process. But trace amounts can survive, and green coffee used in dietary supplements bypasses roasting entirely, making that category a separate and legitimate area of concern. A 2025 University of Parma study found measurable mycotoxin levels in green coffee supplements.
Why Specialty Coffee’s Supply Chain Is the Real Safeguard
The strongest protection against mycotoxins in specialty coffee isn’t lab testing — it’s the tightly managed supply chain that makes contamination unlikely in the first place. Specialty roasters typically source directly from farms or through trusted importers, with full visibility into how beans were grown, dried, and transported. That traceability means problems can be caught and rejected long before roasting.
Other structural advantages include:

Slower, controlled drying that prevents the moisture buildup mold requires

Hermetically sealed or GrainPro-lined bags during shipping, replacing the porous burlap common in commodity trade

High-altitude growing conditions, where cooler and drier climates naturally inhibit mold growth

SCA defect grading that filters out compromised beans before purchase
Not every specialty roaster will have access to third-party mycotoxin lab testing — smaller, independent roasters often don’t. But that’s not necessarily a red flag. When the supply chain is closely managed and sourcing is transparent, the conditions for contamination are rarely present to begin with.
The Marketing Problem
The “mold-free coffee” movement was largely popularized by Bulletproof Coffee as a marketing concept. The performance claims — cognitive enhancement, fatigue reduction tied specifically to mycotoxin elimination — are not well-supported by science. Regulatory bodies including the EU have established safe OTA limits, and most tested coffees stay well within them.
Organic certification doesn’t help here either: it addresses pesticides and farming inputs, not mold. The gap between a well-sourced specialty coffee and a commodity blend is real — it’s just smaller than some brands suggest, and it’s built into the supply chain rather than into a marketing claim.
Two Things Worth Watching
Even if specialty coffee’s supply chain handles most of the risk, there are two areas where consumer habits genuinely matter:
Pre-ground coffee.
Ground coffee has dramatically more surface area than whole beans, which accelerates oxidation — and creates more opportunity for moisture absorption and mold growth during storage. Pre-ground coffee sitting in a grocery store, warehouse, or your pantry for weeks or months is meaningfully higher risk than freshly roasted whole beans ground before brewing. If you’re buying pre-ground, look for recent roast dates, airtight packaging, and smaller quantities you’ll use quickly. When in doubt, whole bean is the safer and better-tasting choice.
Green coffee supplements.
This is the category that warrants the most skepticism. Green coffee extract and powders are marketed for weight loss and antioxidant benefits — but because they’re unroasted, they skip the step that eliminates most mycotoxin contamination. Supply chain standards in the supplement industry are also far less rigorous than in specialty coffee. The 2025 University of Parma study found detectable mycotoxin levels in multiple green coffee supplement products. If you use these, look for brands that publish third-party testing specifically for mycotoxins, OTA, and aflatoxins — and treat any product that doesn’t with real caution.
Bottom line:
If you’re drinking specialty coffee from a roaster with traceable sourcing, mold is not a meaningful concern — with or without a “mold-free” label on the bag. Stick to whole beans, buy fresh, skip the green coffee supplements unless the testing is airtight, and spend your scrutiny on sourcing transparency rather than marketing badges.
